This unit will provide students with an understanding of the range, selection and chemistry of raw materials used in the brewing process and the processes involved in converting these raw materials into wort. It will detail the processing of raw materials before the brewing process, the chemical and physical changes occurring in the brewhouse and describe how the selection of the raw materials influences the characteristics of the final product.
