This unit sets the nutrient foundation for the study of food and its effects on human health. Each of the known nutrients and their biological pathways in digestion, absorption and metabolism is examined. Food energy and energy expenditure form a basis for the study of individual dietary patterns and the application of a nutrient analysis software package.
