NUT4442 Food Science Service and Systems

Description:

This unit examines the science, technology and management of the food industry in Australia and applies principles of food service to ingredient selection, preparation and menu planning for small and large scale food provision.  The Australian food supply and its socio-cultural contexts will be studied in terms of commodities, consumption trends, standards, regulations, policies and marketing.
